Boosting Local Sourcing with Transparent Hospitality Supply Chain Reporting
Transparency in supply chains has become crucial, as consumer demand for information on the origin of products is increasing exponentially.
Hilton’s Food & Drinks team was seeking a solution to easily identify locally sourced foods for hotel guests.
While suppliers often possess this information, the hospitality industry has historically lacked the resources to effectively track product origins. Hilton Supply Management (HSM) embarked on a mission to address this issue and enhance transparency across our supply chains.
We initiated this journey by developing advanced dashboards to report on locally and responsibly sourced products in select EMEA markets.
HSM tracks local sourcing—defined as food or beverage produced within the same, or proximate, country of origin as the purchasing hotel’s location—through a performance score.
Per EMEA regulations, a product’s country of origin is considered the country where the food item is processed or manufactured.
Last year alone, HSM gathered spend insights into over $133M in food and beverage expenditures across EMEA (FY 2023) and documented $55M, or 41.6%, of purchased food products as locally sourced.
Advanced dashboard tracking is enabling HSM and participating properties to significantly increase the volume of locally sourced products, improving our ecological footprint and bolstering local economies.
